Savoury Zucchini Protein Bread [GF]

 

This Savoury Zucchini Protein Bread is packed with protein, healthy fats, and fibre, making it the perfect base for any meal of the day. The zucchini keeps it moist, while seeds, nuts, and a boost of collagen support satiety, a healthy weight, and energy. We love to enjoy this with smashed avocado for breakfast, paired with a fresh salad at lunch, or sliced up as a protein-rich savoury snack on the go. Ingredients

  • 2 cups almond meal 

  • 1 cup tapioca flour, or gluten-free flour 

  • 1 cup Chief Unflavoured Collagen [optional boost of protein]  {DC: LAURAS10]

  • 1 large zucchini, grated [use hands to squeeze out moisture] 

  • ½ cup dill, roughly chopped  

  • ¼ cup chia seeds 

  • ¼ cup black sesame seeds [optional but delicious] 

  • 2 tsp gluten-free baking powder 

  • 4 large eggs, whisked 

  • ¼ cup extra virgin olive oil  

  • 1 lemon, zest & juice 

  • Sea salt and black pepper to taste 

Method

  1. Preheat oven to 180°C fan-forced and line a loaf line.

  2. Add zucchini, lemon zest and juice, eggs, dill, and olive oil to a large mixing bowl, whisking to combine.

  3. Add all dry ingredients to the mixing bowl, stirring with a wooden spoon to combine,

  4. Transfer into your lined load tin and bake for 45 minutes.

  5. Cool completely, store in the fridge for at least 2 hours before slicing into 10 even pieces.
