Ingredients

Crackers

1 1/2 cups buckwheat flour @honesttogoodnessau

1 1⁄2 cups almond meal

1 cup Omega Seeds Mix @hempfoodsaustralia

⅓ cup good-quality Bovine Collagen 

1/4 cup fennel seeds [optional] 

1 tsp chilli flakes [optional]

2 tbsp extra-virgin olive oil

1 1⁄2 cups of filtered water

1 tsp sea salt

Mackerel Topping

1 x 120g Wild-caught mackerel in Extra-virgin Olive Oil @stockmerchant

1 tbsp Great Guts Mayo @gevity 

½ tsp Djion Mustard @ceresorganicsau 

1 tbsp Hemp Seeds @hempfoodsaustralia

Garnish

Sprinkle of hemp seeds

Fresh lime, sliced thinly

Handful of fresh parsley, finely chopped


Method

 Crackers

  1. Preheat oven to 160°C (320°F) and line a baking tray with baking paper.

  2. In a large bowl, combine buckwheat flour, almond or sunflower meal, Omega Seed Mix, collagen, sunflower seeds, fennel seeds, chilli flakes, and sea salt.

  3. Add olive oil and water. Mix until a thick dough forms. Spread mixture evenly onto the lined tray, about 5mm thick. Score into cracker shapes with a knife.

  4. Bake for 35–40 minutes or until firm and golden. Cool completely before using your hands to snap into crackers.

Mackerel

  1. In a bowl, flake the mackerel and combine with mayo and mustard until creamy.

  2. Spoon over cooled crackers and sprinkle with hemp seeds.

  3. Serve immediately or store topping separately and assemble just before eating.
