As a Nutritionist, I’m always thinking about how to build desserts that work with the body, not against it, and this combination of whole-food ingredients does exactly that.
Ceremony Cacao is one of the most powerful ingredients here. Ingredients
1/2 cup Classic Ceremony Cacao
1 cup coconut oil (melted)
1/3 cup walnuts (roughly chopped)
1/3 cup pepitas
2 tbsp bee pollen
1/2 desiccated coconut
1/2 cup activated buckwheat kernels
1/2 cup frozen cherries
Method
Prepare your tin
Line a small baking tray or loaf tin with baking paper.Melt + mix chocolate base
Gently melt the coconut oil over low heat.
Remove from heat and whisk in the ceremony cacao until smooth and glossy.Add the crunch + texture
Fold in walnuts, pepitas, bee pollen, coconut, and activated buckwheat.Add cherries last
Gently stir through frozen cherries (this helps them hold shape + prevents bleeding too much into the mix).Set
Pour into your lined tray and spread evenly.
Place in the freezer for 1–2 hours or until fully set.Slice + store
Cut into chunks. Store in the fridge (or freezer for a firmer bite).
