Life-Changing Buckwheat Seed Crackers

 

Boy oh boy do these crackers hit the spot. This recipe is one I am asked for time and time again, as they make the perfect protein-rich savoury snack. Personally, I think they’re best served with homemade hummus or tzatziki Make sure to watch my recipe reel here.


Ingredients


1 cup sunflower seeds
3 tbsp flax seed
1/3 cup pepitas
1 1/2 cups buckwheat flour
1 1⁄2 cups almond meal or sunflower meal
1/4 cup fennel seeds
1 tsp chilli flakes (optional)
2 tbsp extra-virgin olive oil
1 1⁄2 cups of filtered water
1 tsp sea salt


Create


1. Preheat oven to 150° and line two trays with baking paper.
2. Combine all ingredients together in a large mixing bowl and leave for 10 minutes until the mixture has thickened.
3. Spread the mixture evenly onto the lined baking sheet and place another sheet of baking paper on top. Using a rolling pin, roll out the mixture as thin as possible. Repeat for the other tray.
4. Bake for 30 minutes, or until they become golden brown and crisp.
5. Once cooked, allow them to cool down for at least 10 minutes. Use your hands to break them into rough pieces.
