Matcha, Lime + Hemp Protein Slice

 

If you’re anything like me, I love a sweet lil something come 3 pm. This slice is a blend of everything I’m loving right now. The matcha, lime, and hemp protein trio is smooth, creamy, and fresh.

The Benefits
Matcha : supports energy, boosts mood, and metabolism.
Hemp : supports collagen production (hello glowing skin), strengthens immune function, and maintains lean muscle.
Lime: strengthens immune function, supports collagen production, and reduces the risk of cardiovascular disease.

Makes 9 medium or 12 small slices


Ingredients


Base
2 cups almond meal
1/2 cup desiccated coconut
1/2 cup hemp seeds
1 heaped tbsp coconut oil, melted
1 tbsp raw honey
1 tsp organic ground cinnamon
Pinch sea salt

Filling
1 heaped tbsp ceremonial-grade matcha tea
500g Coyo Vanilla Coconut Yoghurt
2 limes, zest and juice + extra zest - to garnish
1 heaped tbsp raw honey, or pure maple syrup
3 heaped tbsp tapioca flour
2 scoops Organic Hemp Protein - Vanilla
2 heaped tbsp hemp seeds - to garnish

Create


1. Preheat oven to 180°C fan-forced and lime a square baking tray with baking paper
2. Combine all of the base ingredients together in a medium-sized mixing bowl, using a spatula to combine.
3. Gently pour the base mixture into your lined baking tray, and use your hands to press the mixture evenly into the tray.
4. Bake for 15 mins or until golden brown. Once cooked allow to cool completely (approx 30 mins in fridge).
5. Combine filling ingredients in a medium mixing bowl, stirring with a spatula to combine.
6. Pour filling evenly over the base, sprinkling with hemp seeds and lime zest to garnish.
7. Place into the freezer for at least 4 hours to set. Divide evenly into 9 or 12 slices, depending on how many mouths you are set to feed.
