Lemon & Blueberry Chia Breakfast Bowl

 
Lemon and Blueberry Chia Pudding

Serves 2

Ingredients


4 tbsp chia seeds

½ cup coconut milk

½  cup filtered water

Pinch ground cinnamon


Create

  1. Combine all ingredients together in a glass jar and use a spoon to combine. 

  2. Screw on the lid and leave in the fridge overnight to allow the chia seeds to absorb the liquid and become a glorious pudding.

Ingredients

 1 x serve basic chia pudding recipe

2 tbsp coconut yoghurt

1 tbsp ground flaxseed

1 tbsp Nutra Organics Smooth Vanilla Protein Powder

Zest 1/2 lemon

½ cup frozen blueberries

2 tbsp pepitas

2 tbsp coconut flakes

Create

  1. Place two bowls on your kitchen bench and divide the chia pudding mixture evenly into each bowl

  2. Top each bowl with 1 tbsp coconut yoghurt, ½ tbsp ground flaxseed, ½ tbsp protein powder, zest 1/4 lemon,  ¼ cup frozen blueberries, 1 tbsp pepitas, 1 tbsp coconut flakes.

I love to make up a big batch of my basic chia pudding recipe for the week, so I can add my toppings in the morning to ensure I have a nourishing breakfast made within 5 minutes.
