Choc Caramel Collagen Brownies

 

A friend of mine recently requested a gluten-free brownie recipe, so here she is. These brownies are a great way to boost your intake of healthy fats, magnesium, and collagen. Please note - these brownies make the perfect choccy treat to enjoy with a friend.

Ingredients

2 eggs, whisked

1/2 cup organic ghee/grass-fed butter, melted

100g dark choc (I used Lindt 85%

1 tsp vanilla extract

1/2 cup almond meal

1/2 cup Ceremony Cacao or organic cacao powder

2 tbsp raw honey

1 tsp gluten-free baking powder

Pinch sea salt

Caramel Icing

2 heaped tbsp raw honey

3 heaped tbsp almond butter

3 heaped tbsp Locako Nootropic Collagen Creamer Vanilla Toffee

Pinch sea salt

4 heaped tbsp COYO Vanilla Bean Organic Coconut Yoghurt or Greek Yoghurt

Create

  1. Preheat the oven to 160°C fan-forced and line a shallow baking tin with baking paper.

  2. In a large mixing bowl combine the almond butter, raw honey, ghee, vanilla extract, and eggs.

  3. Stir through the almond meal, baking powder, sea salt, and cacao powder. Once combined, use your hands to break up the dark chocolate and fold through.

  4. Carefully pour the mixture into a prepared tin and bake for 20 minutes.

  5. While the brownies are baking, combine all of the icing ingredients together in a mixing bowl.

  6. Remove brownies from the oven, and allow to cool completely (approx 60 mins) before slathering with your glorious icing.

  7. Store in an airtight container in the fridge for up to 5 days.
